Sweet Potato Scones

My dad’s a man who loves his desserts! He was describing some sweet potato biscuits he purchased at a local bakery, with the hopes that I could come up with something similar. Ever one to rise to a challenge, I set to work creating this recipe. Okay, okay, I confess. I didn’t start immediately. I had a general idea of the direction I was going to go, then…I forgot all about it. Until now. Sorry, dad! Better late than never? … Continue Reading →

Frozen Chicken Stock Beats Canned in Flavor and Convenience

Frozen Chicken Stock

I use chicken stock quite often when I cook. Whether I’m making soup, flavoring rice or potatoes, or braising vegetables, I always like to have some handy. I rarely seem to need an entire can of it, though, and it only keeps a few days once it’s opened. When I started making baby food for my daughter, I got into the habit of keeping home made chicken stock on hand. It was the only way I could be sure it didn’t contain too much sodium for her little kidneys to process. Not only do you benefit from knowing exactly what’s … Continue Reading →

Bacon!

Pan-frying bacon is a good way to end up with grease splatters all over your stove. Those splatters are even less enjoyable when they splash your forearm. Grilling bacon imparts and excellent flavor, and it seasons your grill nicely too. It requires lots of attention, however, to avoid flare-ups resulting in black, crumbly strips. Not only does it eliminate the mess, but it doesn’t require much of my attention, leaving me free to get the rest of breakfast … Continue Reading →

Strawberry Ice Cream

Strawberry season has arrived in the northeast! There’s just nothing that can compare to those sweet little jewels found at local farm stands. They are able to offer varieties that are far too delicate to withstand being trucked across the country. Another local farm carries fresh milk and cream. Again, these are not like what you’d find in a big grocery store. They are so much richer. Combined with fresh, local strawberries, what better way to show them off than by making strawberry ice cream?

Crock Pot Split Pea Soup

I lost a dear friend this past weekend. After many good years together, my electric range went on to that big kitchen in the sky. My mourning period quickly ended when I realized I now had excuse to buy the gas range I’d been wanting. Yay! Of course I’m still without a stove until the replacement arrives and gets installed. Between the grill, the crock pot, the rice cooker and the electric wok, I think I’ll pull through.  I decided I’d finally use that hambone that’s been taking up space in my freezer since Easter. This recipe is based on … Continue Reading →
