I was looking for a cookie that would ship well, to pack with the gifts I mailed out to my brother’s family. I wanted to do gingerbread cutouts, but I wasn’t sure they would arrive intact. I guess you never know where inspiration will strike. I just finished reading From the Corner of His Eye by Dean Koontz. One of the characters proves to be most at home in the kitchen. At one point in the story he makes a batch of chocolate chip cookies with coconut and pecans for his sister. Wow…what a flavor combination!
