Meat and Bean Chili

I think I’m enjoying the winter CSA I joined even more than I enjoyed the summer/fall CSA. Both are great, but the winter version includes such items as locally raised meats, cheeses, milk, and even root beer in addition to the late harvest/cold storage fruits and veggies. Our most recent share included a pound of ground goat meat. If you’ve never had goat, it’s similar to but gamier than lamb. It can replace beef in just about any dish, and it stands up particularly well in spicier recipes.

Perfectly Cooked Bacon Without the Mess!

Pan-frying bacon is a good way to end up with grease splatters all over your stove. Those splatters are even less enjoyable when they splash your forearm. Grilling bacon imparts and excellent flavor, and it seasons your grill nicely too. It requires lots of attention, however, to avoid flare-ups resulting in black, crumbly strips. Microwaved bacon dries out too easily, leaving something that more closely resembles artificial bacon bins. I make my bacon in the oven. Lemon Basil Marinade

I’m slacking again with updating this site. I was hoping to get at least one more recipe in before my recent trip to Walt Disney World, but time got away from me. Savory Stuffed Meatloaf

This is another recipe from the archives. I believe I originally found it on the Nabisco web site, hence the brand names in the ingredients list. I always get strange looks from people when the ask how I make the sauce. A1 and marmalade doesn’t sound like a weird combination, but – trust me – it works! I was never a fan of meatloaf until I tried this recipe. Herbed Prime Rib Roast

I originally found this recipe in Gourmet Entertains (2000), but I’ve made a few changes since I first tried it. It is absolutely the most flavorful prime rib I’ve ever tasted, and the paste cooks up into a wonderful crust. Your house will smell amazing when you make this. Another plus is that it’s very easy to prepare, especially if you have your butcher trim the roast for you.
