We love butternut squash all year round, but it’s not the easiest vegetable to prepare. When Thanksgiving rolls around and every burner of your stove is being used at once, the idea of pealing and chopping this tough gourd can seem daunting. I used to get a dish smiliar to this at a restaurant called Bainbridge’s in Chelmsford, MA. Sadly, they’re no longer open. Last night I decided to try making it at home. I’m really pleased with the way it turned out. It’s a very simple dish to make, but it makes an elegant presentation. The flavors are very well balanced. It’s neither too sweet nor too spicy.
