Apple Butter

Just about any apple you can eat will work with this recipe. I had a bunch of random varieties (Honey Crisp, Macoun, Cortland, etc.) that I got from our local CSA, so I used a mixture. The plethora of apples I received this year was actually the main reason I decided to make this recipe. I just didn’t have room to store them all. Luckily, apple butter is delicious, easy to make, and uses LOTS of apples. It also makes your house smell amazing! So be cautious if you decide to let it cook overnight. I lost a dear friend this past weekend. After many good years together, my electric range went on to that big kitchen in the sky. My mourning period quickly ended when I realized I now had excuse to buy the gas range I’d been wanting. Yay! Of course I’m still without a stove until the replacement arrives and gets installed. Between the grill, the crock pot, the rice cooker and the electric wok, I think I’ll pull through.  I decided I’d finally use that hambone that’s been taking up space in my freezer since Easter. Chicken and Carrots with Wine Sauce

I love using my crock pot. After working all day an spending an hour in traffic coming home, I don’t always feel like cooking. This recipe, adapted from the September 1999 issue of Cooking Light, can be thrown together in a few minutes before heading out the door in the morning. Set the timer so it finishes about the time you expect to be home, and come home to a fabulous, healthy, home-cooked meal! Serve with bread or rice and you’re good to go. The chicken falls off the bone when it’s done, and the garlic becomes soft and mellow. … Continue Reading →

These are the reasons I love my crockpot. Get everything ready in the morning before leaving for work, set the crockpot, and come home to mouthwatering aromas! You can also get everything ready the night before, just store it in the refrigerator till morning. Slow Cooker Pulled Pork

I try to avoid specifying what brands to use in my recipes. Heck, I don’t get paid to recommend Brand A over Brand B, so why should I give them free advertising? Well, here is one instance where I must insist on a particular brand. Since the barbecue sauce plays such a key roll in this recipe, I won’t use anything but Sweet Baby Ray’s. That stuff is by far the best barbecue sauce I’ve ever tried. I like to serve this on a buttered and grilled bulkie roll, topped with extra barbecue sauce and a dash of hot sauce. … Continue Reading →
