Peaches and Cream Ice Cream | Dawn's Recipes

August is National Peach Month, as evidenced by the number of peaches in my CSA share each week. So this week’s post and next week’s will both be featuring these “sun soakin’ bulges” in a couple of my favorite ways. (My apologies to The Presidents of the United States of America.) … Continue Reading →

Apple Pie Ice Cream

I came up with this recipe in my desperation to use up all the apples I was getting from my winter CSA. It’s fortunate that my daughter loves raw apples so much, but I really prefer mine cooked. Lemon Coconut Cream Pie

I got this recipe from a co-worker years ago. I think his roommate’s girlfriend – or something like that – was a chef…or maybe just studying to be one. It’s been so long I really don’t remember. At any rate, she came up with this fabulous recipe. It has a wonderfully light flavor, which is perfect for a beautiful spring or summer afternoon. There’s just a bit of tartness from the lemon, and the coconut gives it an almost tropical taste.
