Where does the time go? I’ve had so much going on in the past several weeks, I can barely remember my own name. In summary, I lost a grandfather, discovered my cat has cancer, and learned I was pregnant. I’m very happy about that last part, but not so much about the rest. Baked Zucchini and Eggplant Casserole

My friend Cindy told me about this recipe from The Classic Zucchini Cookbook by Nancy C. Ralston. It may not look like much, but it is amazingly flavorful and surprisingly filling! I served it with fresh Italian bread, but next time I think I’ll serve it over penne. I only made the tiniest of changes to the recipe as it was given to me.
