Watermelon Mojito

When I was a bartender I was never once asked to make a mojito. If I had been, I would have had no idea what the customer was asking for. Those were sad times. Now it’s the rare bar that doesn’t have some type of mojito on their specialty drink menu.

Today there are so many variations to the original minty-lime drink. It can be adapted to any season. One of my personal favorites is the pear mojito, which I’ll wait to enjoy till the fall. Since it’s summer, today I went with watermelon. Continue Reading →

Nomlettes - Mini Omelettes To Go

Have I mentioned how much I love my CSA? Every week I get a big crate overflowing with fresh produce from a local farm. The CSA I’m a member of also includes eggs…lots of eggs. When I realized I had over 3 dozen eggs in my fridge with more to come on Monday, I knew I had to do something with them fast.

This is probably not a new idea, but it’s one I hadn’t thought of before. My mom told me that my aunt bakes eggs in a muffin pan and freezes them. Then when she wants eggs, she just takes one or two out of the freezer, zaps them in the microwave for a few seconds, and voilà! Breakfast! (Or lunch, or dinner, or…) Continue Reading →

Summer Vegetable Stew
I’ve had this recipe, or some variation of it, in my collection for I don’t know how long. I’m not even sure where the original came from. What I do know is that it’s one of my husband’s favorite ways to eat vegetables. Since he thinks vegetables are an “optional” part of any meal, I do what I can to get him excited about them.

While I was making this yesterday, my husband said the aroma took him back to his Italian grandmother’s kitchen. Simple foods from the earth, probably grown in their very own garden. Continue Reading →

Sweet Potato Scones

My dad’s a man who loves his desserts! He was describing some sweet potato biscuits he purchased at a local bakery, with the hopes that I could come up with something similar. Ever one to rise to a challenge, I set to work creating this recipe.

Okay, okay, I confess. I didn’t start immediately. I had a general idea of the direction I was going to go, then…I forgot all about it. Until now. Sorry, dad! Better late than never? Continue Reading →

Frozen Chicken Stock Beats Canned in Flavor and Convenience

Frozen Chicken Stock

I use chicken stock quite often when I cook. Whether I’m making soup, flavoring rice or potatoes, or braising vegetables, I always like to have some handy. I rarely seem to need an entire can of it, though, and it only keeps a few days once it’s opened.

When I started making baby food for my daughter, I got into the habit of keeping home made chicken stock on hand. It was the only way I could be sure it didn’t contain too much sodium for her little kidneys to process. Not only do you benefit from knowing exactly what’s in it, it’s also much tastier than store-bought, and if you store it right it’s even easier to use. Continue Reading →
