Meat Cake
By now many of you have seen the Meat Cake made famous by Black Widow Bakery. If you haven’t seen it yet, you must check it out. I admit my first reaction was less than flattering, but I was so impressed with her creativity!
I showed my fiancé the site, thinking he’d find it as humorous as I did. You know, just another one of those jokes going around the Internet. Much to my dismay, his immediate response was, “When are you making me a meat cake?” I dragged my feet for a while, but eventually I broke down and made him one.
Well, my first attempt was a success! It looked like a cake, and was actually quite tasty. I got as far as “frosting” the cake but did not get the chance to decorate it. My fiancé was too eager to try it.

My second attempt was more fun for me. I made it for a co-workers birthday. Since he was not around to say, “Is it ready yet?” I had more time to work on it. I added some blue food coloring to the potato “frosting” and decorated it as seen below.

You can use almost any meatloaf recipe for the “cake” layers. I used the Savory Stuffed Meatloaf recipe with some modifications. I basically mixed everything together instead of separating the stuffing ingredients. I used the glaze in between the cake layers, and served extra with the individual slices.

When I did Atkins in the late 90’s my mom made one of these for my birthday. It was fabulous!
