
I used to get a dish smiliar to this at a restaurant called Bainbridge’s. Sadly, it’s no longer on the menu. Last night I decided to try making it at home. I’m really pleased with the way it turned out. It’s a very simple dish to make, but it makes an elegant presentation. The flavors are very well balanced. It’s neither too sweet nor too spicy.
Make sure not to let the salmon or the glaze sit in the baking pan once it’s removed from the oven. The maple glaze will start to set and you won’t be able to spoon it onto the fish. And trust me, you won’t want to miss out on any of that glaze! The heavy bottomed pan helps to retain the heat a bit longer, buying you a bit more time.
Ingredients
1 pound salmon filet, cut into 2 pieces
1 tablespoon walnuts, coarsely chopped
1/4 cup pure maple syrup
1 tablespoon dark soy sauce
1 teaspoon hot sesame oil
1/2 teaspoon fresh grated ginger
Directions
Preheat the oven to 450°F.Spray a heavy bottomed baking pan lightly with cooking spray. Place the salmon skin side down in the baking pan. Sprinkle with chopped walnuts.
In a small bowl, whisk together the remaining ingredients. Pour over salmon.
Bake for 18 minutes, basting with the glaze halfway through.
Transfer the salmon to a serving dish and immediately spoon some of the remaining glaze over it.
