Mango Smoothie
When I was in Hawaii last September, one hotel we stayed at served tiny mango smoothies with breakfast every morning. They were delicious; I wished they hadn’t been so small. I found some beautiful mangoes while shopping at a farmers market last week and decided to try making my own.
Ingredients:
1 small mango, cut into 1-inch pieces (about 1 cup of fruit)
1 cup milk
3/4 cup low-fat plain yogurt
1 tablespoon honey
Directions:
Lay the mango pieces on a plate and freeze for about 30 minutes.
Place all the ingredients into a blender and puree until smooth, about 60 seconds. Pour into two juice glasses and serve immediately.
Makes two 8-ounce servings…or one big one if you’re so inclined!
