Individual Chocolate Lava Cakes

What? Another lava cake recipes? Isn’t every recipe blogger doing that? Okay, okay. But this is the last part of my red-themed-anti-Valentine’s Day dinner, and I wanted to post it. There are many different ways to make this moist, delicious cake with a melty center. Sometimes the center is made separately from the rest of the cake, sometimes not. Roast Cornish Hens with Cranberry-Thyme Sauce

Continuing with the red theme of the Valentine’s Day dinner I served last Saturday, I chose this recipe for the main course. It’s based on a highly rated recipe from epicurious.com with several modifications. Instead of cutting the hens in half, I left them whole. It takes a little longer to cook, but I think it makes a nicer presentation. Also, once you remove the bones, half a hen really isn’t very filling, so everyone got their own bird. Wild Rice Stuffing with Hazelnuts and Dried Cranberries

I’ve been making this “stuffing” since I first got the November issue of Bon Appétit in 1999. I use quotes because, while this makes a wonderful stuffing, it works just as well as a side dish. It’s really just a fancy pilaf. Just skip the baking portion if you’re serving it as a side dish. Essentially all the baking does is reheat it. What I really love about this recipe, aside from the wonderful flavor of course, is the bright color of the cranberries and the green onions. It makes it look so festive.
