Spinach and Lentil Soup
avatar

I went to print out this recipe the other day and was surprised to discover I’d never posted it. This is another one of my kick-backs from “back in the day” when I watched every thing I ate. I’m trying to get back into those good habits. Recipes like this one are a big help, because this is something I’d eat even if I wasn’t watching my weight. I found the original recipe in the October 1991 issue of Bon Appétit, but I wanted it even healthier. For one thing, I replaced the standard beef broth with the fat-free, … Continue reading

Tangy Turkey Burgers
avatar

I used to live off turkey burgers when I was a bit more health-conscious. Ah, the good old days! Haha! I do still try to eat healthy, but I’m just not as disciplined as I once was. I still love this recipe, though. It isn’t really a substitute when you’re craving beef. It’s more special than that. This is a burger you’ll crave for it’s own unique flavor. I got the original recipe from a collection of recipe cards I have called Healthy Meals in Minutes. They suggest forming 6 patties, but if you prefer a thicker burger make … Continue reading

Grilled Salmon with Orange Glaze
avatar

This recipe is based on an old newspaper clipping I’ve had for years. I can’t remember which newspaper it was from, but if I had to guess I’d say the Lowell Sun. This recipe is incredibly easy to prepare, and it tastes better than anything you’d get in a restaurant. The fat content may seem a little high, but remember that a lot of that fat is from Omega 3 fatty acids, so it’s beneficial. Ingredients: 1/2 cup orange marmalade 2 teaspoons sesame oil 2 teaspoons soy sauce 1/2 teaspoon fresh ginger root, grated 1 clove garlic 3 tablespoons … Continue reading

Grill-Roasted Butternut Squash
avatar

You don’t have to wait till fall to enjoy roasted vegetables. Sure, when it’s 90° outside and 80% humidity, no one wants to run their oven. Well, if you have a heavy, flame-proof baking dish, you can roast your veggies on the grill. I considered using maple syrup in lieu of the brown sugar, which I still think would be amazing. Most people already have brown sugar in their pantry, and it’s much cheaper than maple syrup, so that tilted the scales. If you feel like splurging, give it a try. You can probably skip the 2 tablespoons of … Continue reading

Oatmeal Cookies
avatar

I had a craving for oatmeal cookies the other day, so I hunted around for a good recipe. I don’t like raisins in my oatmeal cookies, but I do like nuts. I wanted something with a bit of cinnamon also. I was ready to find an okay recipe and modify it to my liking, but I was lucky enough to come across a near perfect recipe at JoyofBAKING.com. I didn’t make my cookies quite so large as indicated. (In the original recipe, they mention using an ice cream scoop!) I used a large cookie scoop, and ended up with … Continue reading
