Honey Wheat Bread

Updated This recipe, based on the one found at AllRecipes.com, is the first bread recipe I ever attempted. It came out okay the first time, but it was a little tough. It was years before I tried making bread again. Now that I’ve had more experience with breads, I decided to give it another whirl. I’m so glad I did! This bread is delicious, and I feel much less guilty about the carbs when I know the fiber and protein content are so high. Ingredients: 3/4 cup warm water 1 package active dry yeast 3/4 cup warm milk 2 … Continue Reading →

Roasted Red Potatoes

This isn’t so much a recipe as a method of preparing potatoes, so I’ve been reluctant to post it until now.  I make them quite often, and they’re always a big hit.  Crispy on the outside, soft on the inside, with brown pieces of onion here and there…my mom thinks they are very post-worthy, and how am I to argue with that?  So, at her request, here it is. So, when asking her what type of vegetable she’d like with her Mother’s Day dinner, her first suggestion was green beans. Don’t get me wrong, green beans are a wonderful vegetable, but I wanted to do something different. Bon Appétit came to the rescue with a recipe in this month’s issue. I didn’t change much, other than to double it and leave the green beans whole. It was a big hit with my family, and, happily, my mom had seconds. Mission accomplished! Flaxseed oil is … Continue Reading →

Lemon Coconut Cream Pie

I got this recipe from a co-worker years ago. I think his roommate’s girlfriend – or something like that -was a chef…or maybe just studying to be one. It’s been so long I really don’t remember. (He he!) At any rate, she came up with this fabulous recipe. It has a wonderfully light flavor, which is perfect for a beautiful spring or summer afternoon. There’s just a bit of tartness from the lemon, and the coconut gives it an almost tropical taste. You can use limes in place of the lemons, if that’s more to your liking, … Continue Reading →
