Boston Baked Beans

Updated I found this recipe on About.com ages ago. It claims to be the recipe for the baked beans served at Durgin Park restaurant in Boston. I don’t know if that’s true, but I do know that these are the best baked beans I’ve ever tasted. They take a long time to make, but there’s very little work involved. Ingredients: 2 ½ quart bean pot or covered casserole 1 pound Navy beans or other small white beans ½ teaspoon baking soda ½ pound salt pork ½ medium onion, peeled and uncut 4 tablespoons sugar 1/3 cup molasses 1 teaspoon dry … Continue reading

Easy Chicken and Rice Soup

Easy Chicken and Rice Soup

I had a craving for chicken and rice soup the other day and was looking for an easy way to make broth without resorting to canned broth. Allrecipes.com has a recipe that’s a compromise between canned and homemade broth. It uses a pre-cooked, store bought chicken and simmers the skin and bones in a mixture of water and canned broth. Sure, it’s cheating a bit, but you’d never know! Store bought rotisserie chicken comes in a variety of flavors now. I used one with cracked pepper and sea salt, so I didn’t need to add additional salt and pepper to … Continue reading

Spicy Wok Shrimp with Coconut Rice

Updated I love fish with coconut flavors, so I fell in love with this recipe as soon as I saw it in  the July 2006 issue of Gourmet magazine. I made it again last night and decided it was about time to get a picture of it up on this site! Sriracha, if you’ve never had it, is a wonderfully spicy chili sauce that can be found in the Asian section of many grocery stores. It’s thicker and more flavorful than American pepper sauces and has a wonderful aroma. The heat of the sauce is nicely balanced by the coconut … Continue reading

Coconut Pecan Chocolate Chip Cookies

I guess you never know where inspiration will strike. I just finished reading From the Corner of His Eye by Dean Koontz. One of the characters proves to be most at home in the kitchen. At one point in the story he makes a batch of chocolate chip cookies with coconut and pecans for his sister. Wow…what a flavor combination! I immediately ran out to buy the chocolate chips and coconut I’d need, but just got around to actually making them tonight. This recipe makes about 2 dozen cookies but can easily be doubled. Ingredients: 1 1/4 cups all-purpose flour … Continue reading

Pumpkin Spread

Pumpkin Spread

Updated A breakfast place I used to frequent had samples of a pumpkin spread made from a mix. It was amazing! Served with graham crackers it tastes like you’re eating pumpkin cheesecake. I grabbed a box of the mix and decided I wasn’t paying that much for what was essentially a blend of spices with a small can of pumpkin (you had to supply your own cream cheese). Instead, I came up with my own spice blend, added the cream cheese and pumpkin, and it tastes just as wonderful for half the price! I usually serve it with honey graham … Continue reading
