This is my first post as a Daring Baker. The Daring Bakers are a group of food bloggers who challenge each other with a recipe once a month. A part of the challenge rules, we do not stray from the recipe except where the challenger makes exceptions. Pomegranates seem to be everywhere this time of year. I bought a couple recently, and had no idea what to do with them. Usually I just take out all the seeds and put them in a bowl, add a little whipped cream and eat. I decided to get a bit more creative this year. This recipe is essentially a variation on Vanilla Bean Crème Brûlée. I like to use different recipes for turkey, gravy and stuffing each year. It keeps things interesting for me, and the end result is always a surprise. I met my mom for lunch the other day, and had the most wonderful tomato basil soup. I’m not sure what I was expecting, but it wasn’t the smooth, almost buttery flavor of the broth and the subtle, mellow flavors of the tomatoes and basil. It was the perfect thing for a brisk, November day. I knew then what my next recipe would be. This recipe is adapted from the October 2001 issue of Gourmet. I’ve made some minor changes to both the ingredients and the cooking method.
