Fettuccine With Wild Mushroom Sauce

I love when things just naturally come together. I recently bought myself the KitchenAid pasta roller attachment for my stand mixer, something I’ve been eye-balling for a long time. Then I scanned through this month’s issue of Bon Appétit and found a how-to article on making fettuccine. Since this was my first pasta-making attempt, I didn’t modify the recipe in any way. It was absolutely wonderful, although I’m now inspired to create my own flavored pastas. If you’d like read the how-to, it’s also available online here. Turning a couple of pages I saw the recipe for Wild Mushroom Sauce. … Continue reading

Mini Elephant Ears

Updated Source: Tracy Starbird (modified by Dawn DeMeo) I made two batches of these gems this morning, so I decided it was time to update the recipe and add some pictures. The original recipe called for vanilla frosting, but I found it was too heavy for the light pastry and usually omitted it. Today I tried using a glaze designed for sugar cookies found McCormick.com, and now they taste just like the elephant ears I remember from my childhood. Both the pastries and the glaze are incredibly easy to make. Thawing the pastry sheets is the most time consuming part. … Continue reading

Maple Glazed Salmon with Walnuts

I used to get a dish smiliar to this at a restaurant called Bainbridge’s. Sadly, it’s no longer on the menu. Last night I decided to try making it at home. I’m really pleased with the way it turned out. It’s a very simple dish to make, but it makes an elegant presentation. The flavors are very well balanced. It’s neither too sweet nor too spicy. Make sure not to let the salmon or the glaze sit in the baking pan once it’s removed from the oven. The maple glaze will start to set and you won’t be able to … Continue reading

Anise Biscotti

I haven’t done much baking lately, but last weekend I was struck with the urge to make biscotti. I’d never done it before. I’ve had some homemade biscotti that will break your teeth, so I was a little apprehensive. As it turns out, this is the easiest cookie recipe I’ve ever made! I skipped the “optional” 20 minutes at the end because I don’t dunk my biscotti, nor did I have a need to keep them fresh for months. They were gone within a couple of days! This way they still had a nice crunch to them without being a … Continue reading

Fresh Calamari Stew

The leaves are turning, the temperature is dropping, and it seems to rain every other day. Fall is hear, and that means its time to think of comfort foods. I found this recipe in an old cookbook my mom had. It’s called Leone’s Italian Cookbook by Gene Leone, and was published in 1967. It has some amazing recipes, albeit a little outdated. I changed a few things here to improve the taste and make the instructions a little easier to follow. My husband and I were quite happy with the results! I served it with some penne to balance out … Continue reading
