Ingredients
½ cup vegetable shortening
1 cup sugar
1 egg
1 teaspoon vanilla
1 cup milk
1 ½ teaspoons baking soda
½ teaspoon baking powder
2 cups flour
½ teaspoon salt
½ cup cocoa
For the Filling:
½ cup butter
½ cup vegetable shortening
1 cup confectioner’s sugar
½ cup marshmallow cream
Directions
Preheat oven to 375°F. Cream together shortening and sugar. Add egg, vanilla, and milk. Sift together dry ingredients. Gradually add liquid mixture to dry ingredients and blend well. Drop by spoonful onto ungreased cookie sheet.
For the Filling:
Mix ingredients with spoon or mixer.
Makes 24.
These come out better if you use less butter and shortening, and more marshmallow and sugar in the filling. It should be white and fluffy, and not overly buttery.
