Sweet Potato Scones

My dad’s a man who loves his desserts! He was describing some sweet potato biscuits he purchased at a local bakery, with the hopes that I could come up with something similar. Ever one to rise to a challenge, I set to work creating this recipe. Okay, okay, I confess. I didn’t start immediately. I had a general idea of the direction I was going to go, then…I forgot all about it. Until now. Sorry, dad! Better late than never?

I lost a dear friend this past weekend. After many good years together, my electric range went on to that big kitchen in the sky. Frittata Cut Into Wedges

I love the black bean soup at Panera, but I can’t always get to one. I decided to look online for a knock-off recipe and found a decent one on RecipeZaar. It’s not quite the same as the soup at Panera; Panera’s version is vegetarian and the one on RecipeZaar uses chicken bullion. I went one better and used beef stock. I also sautéed the veggies before adding the rest of the ingredients and spiced it all up with some cayenne pepper. Yum!
