Both are great, but the winter version includes such items as locally raised meats, cheeses, milk, and even root beer in addition to the late harvest/cold storage fruits and veggies. Our most recent share included a pound of ground goat meat. If you’ve never had goat, it’s similar to but gamier than lamb. It can replace beef in just about any dish, and it stands up particularly well in spicier recipes. I decided to take inspiration from a bit by comedian Ron White … Continue reading →

It’s fragrant, smooth and just creamy enough to satisfy without seeming too heavy. As with a good tomato soup, I can think of no better accompaniment than a grilled cheese sandwich. Use any variety of winter squash you like (aside from maybe spaghetti squash), or use a combination of 2 or 3. I had a nearly 5-pound red kuri squash on hand which worked perfectly. You may use vegetable stock instead of chicken if you prefer. I’t feels strange to be talking about “winter” squash when summer is barely over, but winter squash is what’s coming into season in New England right now. Last year I got so much butternut squash in my CSA shares, I actually got blisters from cutting it all up. Squash is delicious! I only wish it wasn’t so hard to chop. Luckily the acorn squash I got in this weeks share takes much less effort with the knife. One cut through the center, and you’re done. I included measurements … Continue reading →

It is such a versatile recipe. In addition to the traditional way of serving it with tortilla chips, I’ve had it on top of burgers – both beef and turkey. This morning I discovered it works great as the veggie in a frittata. My husband’s reaction: “The eggs are outdoing the bacon for flavor. It’s a battle to the death!” The original recipe instructs you to seed the tomatoes. I’m lazy, so I skip that step. It’s entirely up to you. My reasoning is that plum tomatoes don’t have a lot of seeds (or the surrounding … Continue reading →

I’m not even sure where the original came from. What I do know is that it’s one of my husband’s favorite ways to eat vegetables. Since he thinks vegetables are an “optional” part of any meal, I do what I can to get him excited about them. While I was making this yesterday, my husband said the aroma took him back to his Italian grandmother’s kitchen. Simple foods from the earth, probably grown in their very own garden. He was describing some sweet potato biscuits he purchased at a local bakery, with the hopes that I could come up with something similar. Ever one to rise to a challenge, I set to work creating this recipe. Okay, okay, I confess. I didn’t start immediately. I had a general idea of the direction I was going to go, then…I forgot all about it. Until now. Sorry, dad! Better late than never? After many good years together, my electric range went on to that big kitchen in the sky. My mourning period quickly ended when I realized I now had excuse to buy the gas range I’d been wanting. Yay! Of course I’m still without a stove until the replacement arrives and gets installed. Between the grill, the crock pot, the rice cooker and the electric wok, I think I’ll pull through. I decided I’d finally use that hambone that’s been taking up space in my freezer since Easter. I’ve had so much going on in the past several weeks, I can barely remember my own name. In summary, I lost a grandfather, discovered my cat has cancer, and learned I was pregnant. I’m very happy about that last part, but not so much about the rest. I won’t get into details here, but for those of you interested, you may read more about those events on my other blog. Needless to say, with all that’s been going on, I haven’t had much time to get creative with my cooking. I decided to look online for a knock-off recipe and found a decent one on RecipeZaar. It’s not quite the same as the soup at Panera; Panera’s version is vegetarian and the one on RecipeZaar uses chicken bullion. I went one better and used beef stock. I also sautéed the veggies before adding the rest of the ingredients and spiced it all up with some cayenne pepper. Yum!
