Both are great, but the winter version includes such items as locally raised meats, cheeses, milk, and even root beer in addition to the late harvest/cold storage fruits and veggies. Our most recent share included a pound of ground goat meat. If you’ve never had goat, it’s similar to but gamier than lamb. It can replace beef in just about any dish, and it stands up particularly well in spicier recipes. I decided to take inspiration from a bit by comedian Ron White … Continue reading →

It’s fragrant, smooth and just creamy enough to satisfy without seeming too heavy. As with a good tomato soup, I can think of no better accompaniment than a grilled cheese sandwich. Use any variety of winter squash you like (aside from maybe spaghetti squash), or use a combination of 2 or 3. I had a nearly 5-pound red kuri squash on hand which worked perfectly. You may use vegetable stock instead of chicken if you prefer. I’m not even sure where the original came from. What I do know is that it’s one of my husband’s favorite ways to eat vegetables. Since he thinks vegetables are an “optional” part of any meal, I do what I can to get him excited about them. While I was making this yesterday, my husband said the aroma took him back to his Italian grandmother’s kitchen. Simple foods from the earth, probably grown in their very own garden. With summer in full … Continue reading →

Whether I’m making soup, flavoring rice or potatoes, or braising vegetables, I always like to have some handy. I rarely seem to need an entire can of it, though, and it only keeps a few days once it’s opened. When I started making baby food for my daughter, I got into the habit of keeping home made chicken stock on hand. It was the only way I could be sure it didn’t contain too much sodium for her little kidneys to process. Not only do you benefit from knowing exactly what’s … Continue reading →

After many good years together, my electric range went on to that big kitchen in the sky. My mourning period quickly ended when I realized I now had excuse to buy the gas range I’d been wanting. Yay! Of course I’m still without a stove until the replacement arrives and gets installed. Between the grill, the crock pot, the rice cooker and the electric wok, I think I’ll pull through. I decided I’d finally use that hambone that’s been taking up space in my freezer since Easter. To this day you can still sit at the horseshoe shaped bar – where it is rumored that Daniel Webster ate and drank more than his fair share of oysters and bourbon – and dine on some of the best oysters and clam chowder around. Of course, bourbon is still available too! I decided to look online for a knock-off recipe and found a decent one on RecipeZaar. It’s not quite the same as the soup at Panera; Panera’s version is vegetarian and the one on RecipeZaar uses chicken bullion. I went one better and used beef stock. I also sautéed the veggies before adding the rest of the ingredients and spiced it all up with some cayenne pepper. Yum! It must have been good because, by the time I ladled out a bowl for myself and … Continue reading →

This is another one of my kick-backs from “back in the day” when I watched every thing I ate. I’m trying to get back into those good habits. Recipes like this one are a big help, because this is something I’d eat even if I wasn’t watching my weight. I found the original recipe in the October 1991 issue of Bon Appétit, but I wanted it even healthier. For one thing, I replaced the standard beef broth with the fat-free, … Continue reading →

Allrecipes.com has a recipe that’s a compromise between canned and homemade broth. It uses a pre-cooked, store bought chicken and simmers the skin and bones in a mixture of water and canned broth. Sure, it’s cheating a bit, but you’d never know! Store bought rotisserie chicken comes in a variety of flavors now.
