Source: Bon Appétit – March 1995 Ingredients 6 large red-skinned potatoes (about 2 1/2 pounds), peeled, cut into 1/2-inch pieces 1 teaspoon paprika 1 teaspoon chili powder 1 teaspoon Creole or Cajun seasoning or 1 additional teaspoon chili powder 1/4 cup olive oil Directions Preheat oven to 400°F. Cook potatoes in medium pot of boiling salted water until almost tender, about 5 minutes. Drain well. Spread potatoes on heavy large baking sheet. Recipe: Twice Baked Potatoes Prep time: 20 minutes Cook time: 1 hour Serves: varies Ingredients potatoes sour cream milk butter imitation bacon bits taco cheese taco seasoning Instructions Bake potatoes; cut in half lengthwise. Scoop flesh out of potatoes into bowl, leaving skins about 1/4-inch thick. Add remaining ingredients and mix. Spoon mixture into potato skins. Top with additional bacon bits, cheese and seasoning.
