I didn’t get one right away, but I kept thinking of them. Next time I returned to the café they were gone. I thought they must be easy enough to make, then life got in the way and I forgot. Recently a local restaurant put them on their dessert menu. Yum! I was fortunate enough to have them twice before they were replaced with another decadent dessert. This time I sucked two of my friends into the obsession with me. … Continue reading →

Fall is my favorite season. I love the crisp, cool mornings, the bright colors on the trees and, of course, going apple picking! Okay, I confess. I didn’t actually pick the apples for this pie. (Unless you count the fact that I picked them out of the bin at the farm stand.) It was pouring the weekend I wanted to go, but I had just purchased a couple … Continue reading →

I think his roommate’s girlfriend – or something like that -was a chef…or maybe just studying to be one. It’s been so long I really don’t remember. (He he!) At any rate, she came up with this fabulous recipe. It has a wonderfully light flavor, which is perfect for a beautiful spring or summer afternoon. There’s just a bit of tartness from the lemon, and the coconut gives it an almost tropical taste. You can use limes in place of the lemons, if that’s more to your liking, … Continue reading →

Finally, I’m going to start adding nutritional information whenever possible. Well, it’s spring…and that means berry season! This recipe from the 1968 edition of Better Homes and Gardens New Cook Book is unlike any other blueberry pie I’ve … Continue reading →

I’m sharing one of my dirty little secrets with you. Here’s a pie that requires no cooking or baking whatsoever, but still tastes fabulous! If you burn the water trying to make tea, you can still make this pie. Hey, even I need a break from cooking now and then! Here’s what you need to make 2 pies: 2 chocolate cookie pie shells (I used Oreo™) 2 bananas, sliced 4 cups (32 ounces) light cream, well chilled 1 package banana cream instant JELL-O™ pudding mix 1 package chocolate instant JELL-O™ pudding mix 1 … Continue reading →

I’ve never tasted meringue before, much less tried my hand at making it. It smells like angel cake when it’s baking and has a very similar flavor. The lemon curd was perfect – not too tart, not to eggy. All this on top of a crust that tastes like shortbread. The recipe can be easily adapted for a single large tart, a pie, “free-form” or tinless tarts, or even made in muffin cups. I’ll describe the method I used here. Thanks to Jen … Continue reading →

Now I had to decide what to make with them. I thought of pecan tarts first, but thought that was over done. Then I thought of making onion tarts, but I wanted something a little sweeter. I went through the entire apple-picking season without making an apple pie this year…very unlike me! So apples won out. I’d slice the apples and arrange them to look pretty, then leave off the top crust…voilà! My husband was so impressed with it. I thought for sure I’d made it for him before, I guess I hadn’t. It’s my favorite chicken pot pie recipe, but it does take a bit of time to put together. It’s absolutely worth it, though! I’ve made some changes to the original post. Aside from adding photos, I changed a couple of measurements to make it easier. The amounts are actually the same, you just no longer need to dirty measuring cups … Continue reading →
