S’mores Tarts – Little Bites of Chocolate Summer Bliss

I first saw s’mores tarts in the bakery case at a local café and thought they were a brilliant idea! I didn’t get one right away, but I kept thinking of them. Next time I returned to the café they were gone. I thought they must be easy enough to make, then life got in the way and I forgot. Recently a local restaurant put them on their dessert menu. Yum! I was fortunate enough to have them twice before they were replaced with another decadent dessert. This time I sucked two of my friends into the obsession with me. … Continue reading

Perfect Apple Pie

Sorry I’m still not posting regularly. I’ve been preoccupied with an in-vitro cycle that did not end well. You can read more about it on my other blog if you’re interested. Fall is my favorite season. I love the crisp, cool mornings, the bright colors on the trees and, of course, going apple picking! Okay, I confess. I didn’t actually pick the apples for this pie. (Unless you count the fact that I picked them out of the bin at the farm stand.) It was pouring the weekend I wanted to go, but I had just purchased a couple … Continue reading
Lemon Coconut Cream Pie

I got this recipe from a co-worker years ago. I think his roommate’s girlfriend – or something like that -was a chef…or maybe just studying to be one. It’s been so long I really don’t remember. (He he!) At any rate, she came up with this fabulous recipe. It has a wonderfully light flavor, which is perfect for a beautiful spring or summer afternoon. There’s just a bit of tartness from the lemon, and the coconut gives it an almost tropical taste. You can use limes in place of the lemons, if that’s more to your liking, … Continue reading
Blueberry Pie

Updated Sorry for the lack of posts lately. I’ve had the flu and haven’t felt much like cooking or writing. I’ve taken the time to make a few changes to the site, though. Some are updates on the back end, so you probably won’t notice those. There is also an alphabetical recipe index to make it easier to quickly browse all the available recipes. Finally, I’m going to start adding nutritional information whenever possible. Well, it’s spring…and that means berry season! This recipe from the 1968 edition of Better Homes and Gardens New Cook Book is unlike any other blueberry pie I’ve … Continue reading
Chocolate Banana Cream Pie

In honor of Pi Day (3.14…nyuk nyuk!) I’m sharing one of my dirty little secrets with you. Here’s a pie that requires no cooking or baking whatsoever, but still tastes fabulous! If you burn the water trying to make tea, you can still make this pie. Hey, even I need a break from cooking now and then! Here’s what you need to make 2 pies: 2 chocolate cookie pie shells (I used Oreo™) 2 bananas, sliced 4 cups (32 ounces) light cream, well chilled 1 package banana cream instant JELL-O™ pudding mix 1 package chocolate instant JELL-O™ pudding mix 1 … Continue reading
