I’m not a big sandwich person. So on the mornings when I’m feeling too lazy to pack something for lunch, I can always purchase something from the cafe. The best days are when mac and cheese is on the menu. No, it’s not the healthiest dining choice I could make, but our cafeteria prides itself on serving “creamy and delicious” lunches. Now, while their mac and cheese is quite good, I knew I could do better at home. Granted, I don’t have to make anywhere near the quantities … Continue reading →

It seems so indulgent with the cream and butter, but so little is used that you don’t have to feel guilty about it. I haven’t made it in a while, so I thought it would be a nice change from all those heavy holiday meals and leftovers I’ve been eating lately. I used a whole wheat pasta this time to make myself feel even better about it. It was perfect! Aside from the darker … Continue reading →

I’ve made some minor changes to both the ingredients and the cooking method. The original recipe claims this serves six, but I think you’d be left with six hungry people on your hands! My husband and I finished it off with two helpings each. Next time I make this I’ll double the recipe to have leftovers. 3 1/2 tablespoons unsalted butter 1 tablespoon all-purpose flour 1 cup beef broth 1 (1-lb) top sirloin beef, fat trimmed, sliced 1/4 inch thick 2 tablespoons olive oil 1/2 cup thinly sliced shallot … Continue reading →

I recently bought myself the KitchenAid pasta roller attachment for my stand mixer, something I’ve been eye-balling for a long time. Then I scanned through this month’s issue of Bon Appétit and found a how-to article on making fettuccine. Since this was my first pasta-making attempt, I didn’t modify the recipe in any way. It was absolutely wonderful, although I’m now inspired to create my own flavored pastas. If you’d like read the how-to, it’s also available online here. Turning a couple of pages I saw the recipe for Wild Mushroom Sauce. … Continue reading →

Fall is hear, and that means its time to think of comfort foods. I found this recipe in an old cookbook my mom had. It’s called Leone’s Italian Cookbook by Gene Leone, and was published in 1967. It has some amazing recipes, albeit a little outdated. I changed a few things here to improve the taste and make the instructions a little easier to follow. My husband and I were quite happy with the results! I served it with some penne to balance out … Continue reading →
