Both are great, but the winter version includes such items as locally raised meats, cheeses, milk, and even root beer in addition to the late harvest/cold storage fruits and veggies. Our most recent share included a pound of ground goat meat. If you’ve never had goat, it’s similar to but gamier than lamb. It can replace beef in just about any dish, and it stands up particularly well in spicier recipes. I decided to take inspiration from a bit by comedian Ron White … Continue reading →

It is such a versatile recipe. In addition to the traditional way of serving it with tortilla chips, I’ve had it on top of burgers – both beef and turkey. This morning I discovered it works great as the veggie in a frittata. My husband’s reaction: “The eggs are outdoing the bacon for flavor. It’s a battle to the death!” The original recipe instructs you to seed the tomatoes. I’m lazy, so I skip that step. It’s entirely up to you. My reasoning is that plum tomatoes don’t have a lot of seeds (or the surrounding … Continue reading →

I decided to look online for a knock-off recipe and found a decent one on RecipeZaar. It’s not quite the same as the soup at Panera; Panera’s version is vegetarian and the one on RecipeZaar uses chicken bullion. I went one better and used beef stock. I also sautéed the veggies before adding the rest of the ingredients and spiced it all up with some cayenne pepper. Yum! It must have been good because, by the time I ladled out a bowl for myself and … Continue reading →

Its appearance lives up to its name. I was a bit skeptical about eating anything from this place, but thank goodness I got over that! They make the most amazing shrimp tacos! I made this version about 3 weeks after tasting the ones in Hawaii, so I don’t know how close they are to the original, but they’re still very tasty! 1 pound raw shrimp, peeled and deveined 2 tablespoons olive oil 1/4 teaspoon Cajun seasoning 1 tablespoon cilantro juice of 1/2 lime 2 teaspoons Sriracha 4 flour tortillas … Continue reading →

They’re incredibly versatile. Scan your fridge for leftover cooked meats and diced vegetables, and you’re halfway there. This is my favorite way to make quesadillas: Ingredients: 1 large boneless, skinless chicken breast 1/4 teaspoon creole seasoning, or to taste 2 tablespoons butter or margarine 4 large flour tortillas (burrito style) 1 cup shredded Mexican blend cheese 2 tablespoons sliced black olives 2 tablespoons sliced jalapenos 1/2 small onion, diced 1/2 tomato, diced Directions: Preheat grill. Season chicken breast with creole seasoning. Grill over medium heat until cooked through, about 6 … Continue reading →
