A quesadilla is basically a dressed up grilled cheese sandwich. They’re incredibly versatile. Scan your fridge for leftover cooked meats and diced vegetables, and you’re halfway there. This is my favorite way to make quesadillas:
Ingredients:
1 large boneless, skinless chicken breast
1/4 teaspoon creole seasoning, or to taste
2 tablespoons butter or margarine
4 large flour tortillas (burrito style)

Ingredients
1 tub sour cream
1 package taco mix
1 can refried beans
1 jar salsa
1 tomato, diced
1 bunch scallions, chopped
1 can sliced black olives
1 package mozzarella cheese, shredded
Directions
Mix sour cream with taco mix powder. Spread refried beans in bottom of pan. Spread mixture on top of beans. Layer remaining ingredients on top of mixture.
