Roasted Red Potatoes

This isn’t so much a recipe as a method of preparing potatoes, so I’ve been reluctant to post it until now.  I make them quite often, and they’re always a big hit.  Crispy on the outside, soft on the inside, with brown pieces of onion here and there…my mom thinks they are very post-worthy, and how am I to argue with that?  So, at her request, here it is. Use a deep dish, heavy-bottomed baking pan.  If you want to do these on the grill, make sure it is flame proof.  I use an enamel coated cast iron pan for … Continue Reading →

Marinated Flank Steak

Marinated Flank Steak

Updated This is one of my fall-back grill recipes. It takes just a few minutes to throw the marinade together. Then you just throw it in the fridge to marinate until you’re ready to grill it. The longer it marinates, the more tender the meat, so try to make it a day ahead of time. Also, I find it hard to time grilled food for doneness. It really depends on how even your grill cooks, how windy it is outside, and several other factors. Save yourself a headache and use an instant read thermometer. The original recipe came from … Continue Reading →

Dawn’s Three-Pepper Steak Dust

Dawn’s Three-Pepper Steak Dust

I love to put some seasoning on my steak before throwing on the grill, but many store-bought “steak seasonings” contain far too much salt. This recipe will make a seasoning that enhances the natural flavors in the meat, rather than covering them up. You can make as much or as little as you want and store it in a jar in your spice rack. To make the “dust” use: 1 part table salt 1 part ground black pepper 2 parts garlic powder 2 parts cayenne pepper 2 parts smoked paprika Season your steak generously with the dust, and grill or … Continue Reading →

Grilled Bananas

Grilled Bananas

Grilling is such a convenient cooking method, especially when you use a gas grill. I grill all year long. It saves me from having to wash all those pots and pans by hand. What I don’t see often enough, however, is dessert cooked on the grill. Grilled bananas very easy to prepare, and you won’t believe how much the taste of the banana changes when cooked! I was fortunate enough to come across some fresh honey from a local beekeeper the other day, but that plastic honey bear from the supermarket will work just fine. For each serving you’ll need … Continue Reading →

Grilled Chicken Quesadillas
avatar

A quesadilla is basically a dressed up grilled cheese sandwich. They’re incredibly versatile. Scan your fridge for leftover cooked meats and diced vegetables, and you’re halfway there. This is my favorite way to make quesadillas: Ingredients: 1 large boneless, skinless chicken breast 1/4 teaspoon creole seasoning, or to taste 2 tablespoons butter or margarine 4 large flour tortillas (burrito style) 1 cup shredded Mexican blend cheese 2 tablespoons sliced black olives 2 tablespoons sliced jalapenos 1/2 small onion, diced 1/2 tomato, diced Directions: Preheat grill. Season chicken breast with creole seasoning. Grill over medium heat until cooked through, about 6 … Continue Reading →
