Easy Apple Butter from Your Slow Cooker

Just about any apple you can eat will work with this recipe. I had a bunch of random varieties (Honey Crisp, Macoun, Cortland, etc.) that I got from our local CSA, so I used a mixture. The plethora of apples I received this year was actually the main reason I decided to make this recipe. I just didn’t have room to store them all. Luckily, apple butter is delicious, easy to make, and uses LOTS of apples. It also makes your house smell amazing! So be cautious if you decide to let it cook overnight. You might wake up with … Continue reading

Watermelon Mojitos

When I was a bartender I was never once asked to make a mojito. If I had been, I would have had no idea what the customer was asking for. Those were sad times. Now it’s the rare bar that doesn’t have some type of mojito on their specialty drink menu. Today there are so many variations to the original minty-lime drink. It can be adapted to any season. One of my personal favorites is the pear mojito, which I’ll wait to enjoy till the fall. Since it’s summer, today I went with watermelon.

Strawberry Ice Cream

Strawberry season has arrived in the northeast! There’s just nothing that can compare to those sweet little jewels found at local farm stands. Combined with fresh, local strawberries, what better way to show them off than by making strawberry ice cream? Continue reading

Apple Crisp

Unless you’ve been living under a rock, you’ve probably noticed it’s apple season. What better way to enjoy a cool autumn day than with a warm, spicy apple crisp? I’ve had this recipe on hand for many years. It was given to me by a wonderful woman I worked with long ago. I love it because it’s so easy to put together. I like to make this with McIntosh apples since you don’t have to worry about a soggy crust, but any tart apple will do. The original recipe didn’t call for nuts, so feel free to omit them … Continue reading
Raspberry Lemonade

The sun finally made an appearance in our little part of the world this weekend. We celebrated the return of that big, yellow orb with an outdoor turkey fry (more on that in a later post!) and some homemade raspberry lemonade! Real lemonade is so easy to make, and lemons are pretty inexpensive, so there’s no need to by mixes with artificial colors and preservatives in them. Just squeeze the juice from a lemon, add some water and sugar, and enjoy! Changing things up with the addition of some fresh berries is only slightly more involved. This recipe also works … Continue reading
