Bean Dip

Ingredients
1 tub sour cream
1 package taco mix
1 can refried beans
1 jar salsa
1 tomato, diced
1 bunch scallions, chopped
1 can sliced black olives
1 package mozzarella cheese, shredded
Directions
Mix sour cream with taco mix powder. Spread refried beans in bottom of pan. Spread mixture on top of beans. Layer remaining ingredients on top of mixture.
Serves 12.

Crispy Coconut Chicken Fingers

Ingredients
1 cup sweetened coconut flakes
½ cup flour
½ teaspoon salt
¼ teaspoon black pepper
¼ teaspoon garlic powder
1 ½ pounds boneless skinless chicken breast halves, cut into 1-inch strips
1 egg, lightly beaten
⅓ cup butter or margarine, melted

Piña Colada Dipping Sauce

Ingredients
4 ounces piña colada mix
3 ounces sour cream
3 ounces crushed pineapple, drained
Directions
Mix well and enjoy.
Makes 1 batch.
