Lemon Basil Marinade

I’m slacking again with updating this site. I was hoping to get at least one more recipe in before my recent trip to Walt Disney World, but time got away from me.  I’d like to say it won’t happen again, but it probably will.  I’ve been thinking up some new ideas for this site, though.  I might start including some non-recipe (but still food related) posts.  They’d focus on techniques I use in the kitchen, some of my most used gadgets, and things of that nature.  I’d also like to start featuring some “guest” recipes, but more on that … Continue Reading →

Black Bean Soup

I love the black bean soup at Panera, but I can’t always get to one. I decided to look online for a knock-off recipe and found a decent one on RecipeZaar. It’s not quite the same as the soup at Panera; Panera’s version is vegetarian and the one on RecipeZaar uses chicken bullion. I went one better and used beef stock. I also sautéed the veggies before adding the rest of the ingredients and spiced it all up with some cayenne pepper. Yum! It must have been good because, by the time I ladled out a bowl for myself and … Continue Reading →

Spinach and Lentil Soup

I went to print out this recipe the other day and was surprised to discover I’d never posted it. This is another one of my kick-backs from “back in the day” when I watched every thing I ate. I’m trying to get back into those good habits. Recipes like this one are a big help, because this is something I’d eat even if I wasn’t watching my weight. I found the original recipe in the October 1991 issue of Bon Appétit, but I wanted it even healthier. For one thing, I replaced the standard beef broth with the fat-free, … Continue Reading →

Tangy Turkey Burgers

I used to live off turkey burgers when I was a bit more health-conscious. Ah, the good old days! Haha! I do still try to eat healthy, but I’m just not as disciplined as I once was. I still love this recipe, though. It isn’t really a substitute when you’re craving beef. It’s more special than that. This is a burger you’ll crave for it’s own unique flavor. I got the original recipe from a collection of recipe cards I have called Healthy Meals in Minutes. They suggest forming 6 patties, but if you prefer a thicker burger make … Continue Reading →

Pizza Dough
avatar

Making your own pizza dough is very easy. You don’t have to knead the dough. Just stir the ingredients together and let it rise in the fridge over night. This recipe is based on the one in Rose Levy Beranbaum’s The Bread Bible. I made some changes in the amount, because the original recipe makes a very small pizza. I also had no instant yeast, so I converted the recipe for use with active dry yeast instead. You can see more pizza photos using this recipe in my pizza party post. Ingredients (weights are in parentheses): 1 1/2 cups … Continue Reading →
