It is such a versatile recipe. In addition to the traditional way of serving it with tortilla chips, I’ve had it on top of burgers – both beef and turkey. This morning I discovered it works great as the veggie in a frittata. My husband’s reaction: “The eggs are outdoing the bacon for flavor. It’s a battle to the death!” The original recipe instructs you to seed the tomatoes. I’m lazy, so I skip that step. It’s entirely up to you. My reasoning is that plum tomatoes don’t have a lot of seeds (or the surrounding … Continue reading →

I’m not even sure where the original came from. What I do know is that it’s one of my husband’s favorite ways to eat vegetables. Since he thinks vegetables are an “optional” part of any meal, I do what I can to get him excited about them. While I was making this yesterday, my husband said the aroma took him back to his Italian grandmother’s kitchen. Simple foods from the earth, probably grown in their very own garden. With summer in full … Continue reading →

Whether I’m making soup, flavoring rice or potatoes, or braising vegetables, I always like to have some handy. I rarely seem to need an entire can of it, though, and it only keeps a few days once it’s opened. When I started making baby food for my daughter, I got into the habit of keeping home made chicken stock on hand. It was the only way I could be sure it didn’t contain too much sodium for her little kidneys to process. Not only do you benefit from knowing exactly what’s … Continue reading →

I’ve had so much going on in the past several weeks, I can barely remember my own name. In summary, I lost a grandfather, discovered my cat has cancer, and learned I was pregnant. I’m very happy about that last part, but not so much about the rest. I won’t get into details here, but for those of you interested, you may read more about those events on my other blog. Needless to say, with all that’s been going on, I haven’t had much time to get creative with my cooking. We celebrated the return of that big, yellow orb with an outdoor turkey fry (more on that in a later post!) and some homemade raspberry lemonade! Real lemonade is so easy to make, and lemons are pretty inexpensive, so there’s no need to by mixes with artificial colors and preservatives in them. Just squeeze the juice from a lemon, add some water and sugar, and enjoy! Changing things up with the addition of some fresh berries is only slightly more involved. This recipe also works … Continue reading →

I was hoping to get at least one more recipe in before my recent trip to Walt Disney World, but time got away from me. I’d like to say it won’t happen again, but it probably will. I’ve been thinking up some new ideas for this site, though. I might start including some non-recipe (but still food related) posts. They’d focus on techniques I use in the kitchen, some of my most used gadgets, and things of that nature. I’d also like to start featuring some “guest” recipes, but more on that … Continue reading →

I decided to look online for a knock-off recipe and found a decent one on RecipeZaar. It’s not quite the same as the soup at Panera; Panera’s version is vegetarian and the one on RecipeZaar uses chicken bullion. I went one better and used beef stock. I also sautéed the veggies before adding the rest of the ingredients and spiced it all up with some cayenne pepper. Yum! It must have been good because, by the time I ladled out a bowl for myself and … Continue reading →

This is another one of my kick-backs from “back in the day” when I watched every thing I ate. I’m trying to get back into those good habits. Recipes like this one are a big help, because this is something I’d eat even if I wasn’t watching my weight. I found the original recipe in the October 1991 issue of Bon Appétit, but I wanted it even healthier. For one thing, I replaced the standard beef broth with the fat-free, … Continue reading →

Ah, the good old days! Haha! I do still try to eat healthy, but I’m just not as disciplined as I once was. I still love this recipe, though. It isn’t really a substitute when you’re craving beef. It’s more special than that. This is a burger you’ll crave for it’s own unique flavor. You don’t have to knead the dough. Just stir the ingredients together and let it rise in the fridge over night. This recipe is based on the one in Rose Levy Beranbaum’s The Bread Bible. I made some changes in the amount, because the original recipe makes a very small pizza. I also had no instant yeast, so I converted the recipe for use with active dry yeast instead. You can see more pizza photos using this recipe in my pizza party post. Ingredients (weights are in parentheses): 1 1/2 cups … Continue reading →
