Oatmeal Cookies

I had a craving for oatmeal cookies the other day, so I hunted around for a good recipe. I don’t like raisins in my oatmeal cookies, but I do like nuts. I wanted something with a bit of cinnamon also. I was ready to find an okay recipe and modify it to my liking, but I was lucky enough to come across a near perfect recipe at JoyofBAKING.com. I didn’t make my cookies quite so large as indicated. (In the original recipe, they mention using an ice cream scoop!) I used a large cookie scoop, and ended up with … Continue Reading →

Crystal Diamond Cookies

I don’t know if any of you read The Bakers’ Banter – King Arthur Flour’s baking blog – but you really should. The articles are filled with wonderful step-by-step photos of amazing creations. It’s good to use a keyboard cover when visiting the site because you’ll be drooling all over it when you see those photos! When I saw these Crystal Diamonds I could not wait to make them. I’ve never seen such simple cookies look so jewel-like. The lemon oil sold through the KA website is a little pricey. I found the same oil several dollars cheaper in … Continue Reading →

Cadbury Mini Egg Cookies with Macadamia Nuts

What are you going to do with all that leftover Easter candy? Nikki has provided the perfect solution by choosing Easter candy as this month’s Master Baker ingredient. Keep an eye out for her recipe round-up at the beginning of April. There are bound to be recipes for just about every type of Easter candy imaginable! My favorite Easter candy is the Cadbury mini egg. These are the candy-coated, milk chocolate eggs, not the sickly sweet, creme-filled variety. (Sorry to any fans of the creme egg I may have offended!) I thought they’d be the perfect substitute for the chocolate … Continue Reading →

Coconut Pecan Chocolate Chip Cookies

I guess you never know where inspiration will strike. I just finished reading From the Corner of His Eye by Dean Koontz. One of the characters proves to be most at home in the kitchen. At one point in the story he makes a batch of chocolate chip cookies with coconut and pecans for his sister. Wow…what a flavor combination! I immediately ran out to buy the chocolate chips and coconut I’d need, but just got around to actually making them tonight. This recipe makes about 2 dozen cookies but can easily be doubled. Ingredients: 1 1/4 cups all-purpose flour … Continue Reading →

Hermit Cookies

Hermits are soft, spicy, cake-like cookies, and they happen to be one of the very few ways I enjoy eating raisins. Maybe it’s all that soaking, or all the butter and brown sugar and spices, or maybe it’s just the memory of my mom baking them when I was a kid. After passing through both her hands and mine, this recipe has changed from the original found in the American Family Cookbook. Just how much I can’t say, because I’ve never seen the original. Ingredients: 1 cup dark seedless raisins 2 1/2 cups all purpose flour 3/4 teaspoon baking soda … Continue Reading →
