Cadbury Mini Egg Cookies with Macadamia Nuts

What are you going to do with all that leftover Easter candy? Nikki has provided the perfect solution by choosing Easter candy as this month’s Master Baker ingredient. Keep an eye out for her recipe round-up at the beginning of April. There are bound to be recipes for just about every type of Easter candy imaginable! My favorite Easter candy is the Cadbury mini egg. These are the candy-coated, milk chocolate eggs, not the sickly sweet, creme-filled variety. (Sorry to any fans of the creme egg I may have offended!) I thought they’d be the perfect substitute for the chocolate … Continue Reading →

Chocolate Banana Cream Pie

In honor of Pi Day (3.14…nyuk nyuk!) I’m sharing one of my dirty little secrets with you. Here’s a pie that requires no cooking or baking whatsoever, but still tastes fabulous! If you burn the water trying to make tea, you can still make this pie. Hey, even I need a break from cooking now and then! Tiramisù

Tiramisù roughly translates to “pick me up” in reference to the espresso, coffee and alcohol it contains. Frankly, any dessert this rich makes me want to take a nap after! Perhaps that’s why it’s common to serve coffee with dessert, or in this case a nice cup of espresso. I’d never made tiramisù before because I’ve never been that thrilled with what I’ve gotten in restaurants. My dad, on the other hand, always seems to enjoy it. When the November/December 2007 issue of Cook’s Illustrated arrived with an article claiming to perfect the art of tiramisù, I decided to give … Continue Reading →

Coconut Pecan Chocolate Chip Cookies

I guess you never know where inspiration will strike. I just finished reading From the Corner of His Eye by Dean Koontz. One of the characters proves to be most at home in the kitchen. At one point in the story he makes a batch of chocolate chip cookies with coconut and pecans for his sister. Wow…what a flavor combination! I immediately ran out to buy the chocolate chips and coconut I’d need, but just got around to actually making them tonight. This recipe makes about 2 dozen cookies but can easily be doubled. Ingredients: 1 1/4 cups all-purpose flour … Continue Reading →

Heath Bar Cookies

Simply Recipes recently posted a recipe for these amazing Heath Bar Cookies. I love Heath Bars. My pepere got me hooked on them at an early age. So once I saw this recipe, I just had to make a batch. Wow! I usually have pretty good self-control when it comes to sweets. I ate about half a dozen of these the first night, then another half dozen the next day. I brought the remaining cookies to work, where I knew my hungry co-workers would happily keep me from eating all the cookies myself. I made one small change to … Continue Reading →
