I didn&#8217;t get one right away, but I kept thinking of them. Next time I returned to the café they were gone. I thought they must be easy enough to make, then life got in the way and I forgot. Recently a local restaurant put them on their dessert menu. Yum! I was fortunate enough to have them twice before they were replaced with another decadent dessert. I immediately ran out to buy the chocolate chips and coconut I&#8217;d need, but just got around to actually making them tonight. This recipe makes about 2 dozen cookies but can easily be doubled. 		<description><![CDATA[Source: Brown Bag Cookie Art Ingredients ½ cup butter, at room temperature 1 ½ tablespoons cocoa powder ½ cup powdered sugar, unsifted ½ teaspoon vanilla 1 cup flour, unsifted Directions Cream the butter. Cream in the powdered sugar, then the cocoa, and the vanilla. Now work in the flour. Knead the dough on an unfloured board until nice and smooth. Spray the shortbread pan very lightly with a non-stick vegetable oil spray. Firmly press the dough into the shortbread pan.
