Easy Apple Butter from Your Slow Cooker

Apple Butter

Just about any apple you can eat will work with this recipe. I had a bunch of random varieties (Honey Crisp, Macoun, Cortland, etc.) that I got from our local CSA, so I used a mixture. The plethora of apples I received this year was actually the main reason I decided to make this recipe. I just didn’t have room to store them all. Luckily, apple butter is delicious, easy to make, and uses LOTS of apples. It also makes your house smell amazing! So be cautious if you decide to let it cook overnight. You might wake up with … Continue reading

Nomlettes - Mini Omelettes To Go

Have I mentioned how much I love my CSA? Every week I get a big crate overflowing with fresh produce from a local farm. The CSA I’m a member of also includes eggs…lots of eggs. When I realized I had over 3 dozen eggs in my fridge with more to come on Monday, I knew I had to do something with them fast. Sweet Potato Scones

My dad’s a man who loves his desserts! He was describing some sweet potato biscuits he purchased at a local bakery, with the hopes that I could come up with something similar. Ever one to rise to a challenge, I set to work creating this recipe. Okay, okay, I confess. I didn’t start immediately. I had a general idea of the direction I was going to go, then…I forgot all about it. Until now. Sorry, dad! Better late than never?

Perfectly Cooked Bacon Without the Mess!

Bacon!

Pan-frying bacon is a good way to end up with grease splatters all over your stove. Those splatters are even less enjoyable when they splash your forearm. Grilling bacon imparts and excellent flavor, and it seasons your grill nicely too. It requires lots of attention, however, to avoid flare-ups resulting in black, crumbly strips. Microwaved bacon dries out too easily, leaving something that more closely resembles artificial bacon bins. I make my bacon in the oven. Not only does it eliminate the mess, but it doesn’t require much of my attention, leaving me free to get the rest of breakfast … Continue reading

Sunday Frittata

Frittata Cut Into Wedges

This is a somewhat informal recipe.  A frittata is just an open-faced omelet, and I don’t think there are many people who need a recipe for that.  So this is more of a method of how I do it.  Or maybe it was just an excuse for me to take pictures of breakfast. :) A few weeks ago I purchased a kit for growing mushrooms.  I’m growing white mushrooms and portabellas (or portobellos, if you prefer that spelling).  I’ve seen wild mushrooms seemingly appear overnight in the yard, but I didn’t realize how fast they’d actually grow in my … Continue reading
