Depending on your waffle iron you’ll probably use about 1/4 to 1/3 cup of batter per waffle. As such, your cooking times will vary. Check the instructions for your waffle iron. If you lost the instructions, start with the smaller amount for … Continue reading →

We were told that Julia’s was “the world’s best” banana bread. I always thought of banana bread as something you make to save extra bananas from going in the trash. That was until I tasted the heaven that is Julia’s banana bread. One thing that stood out was the buttery flavor. I always made mine using the recipe in the Better Homes and Gardens New Cookbook, which uses oil for the fat. I noticed today that our … Continue reading →

This one is from Beard On Bread by James Beard. The recipe produces a soft, buttery roll that’s perfect for accompanying your Holiday dinner. I’ve made them for Easter and Christmas this year. Of course, they’re so good you may not want to wait for a special occasion to make them! I formed mine into crescents, because I find that to be the easiest. Feel free to play around with different shapes, though – knots, braids, fans, etc. Ingredients: 1 1/2 tablespoons active dry yeast 1 tablespoon sugar 1/2 … Continue reading →

I decided I’m make some this Sunday. Well, I couldn’t wait till, so I ended up baking them on Friday night, then warmed them up and iced them on Saturday morning so I could have them for breakfast. I used a recipe from King Arthur Flour, but used their baker’s cinnamon filling instead of just sprinkling cinnamon and sugar on the inside. It’s amazing stuff, and I highly recommend buying some. (No, they don’t pay me to say that. It’s just that good!) … Continue reading →

You don’t have to knead the dough. Just stir the ingredients together and let it rise in the fridge over night. This recipe is based on the one in Rose Levy Beranbaum’s The Bread Bible. I made some changes in the amount, because the original recipe makes a very small pizza. I also had no instant yeast, so I converted the recipe for use with active dry yeast instead. You can see more pizza photos using this recipe in my pizza party post. Ingredients (weights are in parentheses): 1 1/2 cups … Continue reading →

That’s not to say I didn’t have a recipe blog before then. I just didn’t have one with an easy-to-remember URL. It didn’t always have such nice pictures with the recipes, and there was no commentary at all. It was basically just my recipe collection in an internet accessible format. I did migrate all those recipes to this site at the onset, and I’m going through them as I have the time to add the missing pictures and commentary. Today I’m doing something a little different. I’d invited my dad over for lunch … Continue reading →

It’s one of the classics. This is bread pudding the way my mom taught me to make it. It’s a favorite of my dad’s, and he’s been dropping hints lately. So, I finally got around to making it for him. With all my bread baking lately, you think I’d have tons of stale bread left over, but it doesn’t last that long. So I bought some from a bakery and left the bag open for a couple of days. I just used sliced white sandwich bread for this, but you really need to buy it from … Continue reading →

It came out okay the first time, but it was a little tough. It was years before I tried making bread again. Now that I’ve had more experience with breads, I decided to give it another whirl. I’m so glad I did! This bread is delicious, and I feel much less guilty about the carbs when I know the fiber and protein content are so high. What can I say? I’m hooked. It’s so much fun to make, and I get such great feedback from my family. My grandfather actually tried to pay me to make him a loaf of raisin bread after my mom shared hers with him. And, no, of course I didn’t take the money. I was looking for a good Italian bread recipe, and none of my cookbooks (not even those all about bread) had what I wanted. I found a basic Italian bread recipe by Emeril on foodnetwork.com that came close. The rules of this one are simpler, and allow for more creativity on my part. Nikki picks an ingredient, and we’re allowed to make any baked good we desire using that ingredient. This month’s ingredient is cinnamon. As it happens, making Julia Child’s French bread set me on a bread-baking frenzy. I bought myself a couple of books on the subject: Beard On Bread by James Beard and The Bread Bible by Rose Levy Beranbaum.
