Wild Blueberry Waffles

This is a very simple waffle recipe.  I like to make a big batch and freeze the extra waffles.  During the week I’ll pop them in the toaster for a quick breakfast.  I actually prefer my waffles without any butter or syrup, so I can just wrap them in a napkin and eat them on the go. Depending on your waffle iron you’ll probably use about 1/4 to 1/3 cup of batter per waffle.  As such, your cooking times will vary.  Check the instructions for your waffle iron.  If you lost the instructions, start with the smaller amount for … Continue reading

Banana Bread with Macadamia Nuts

When my husband and I went to Hawaii, we discovered a few stands selling banana bread by the side of the road. We were told that Julia’s was “the world’s best” banana bread. I always thought of banana bread as something you make to save extra bananas from going in the trash. That was until I tasted the heaven that is Julia’s banana bread. One thing that stood out was the buttery flavor. I always made mine using the recipe in the Better Homes and Gardens New Cookbook, which uses oil for the fat. I noticed today that our … Continue reading

Parker House Rolls

Just about every cookbook has a version of this recipe. This one is from Beard On Bread by James Beard. The recipe produces a soft, buttery roll that’s perfect for accompanying your Holiday dinner. I’ve made them for Easter and Christmas this year. Of course, they’re so good you may not want to wait for a special occasion to make them! I formed mine into crescents, because I find that to be the easiest. Feel free to play around with different shapes, though – knots, braids, fans, etc. Ingredients: 1 1/2 tablespoons active dry yeast 1 tablespoon sugar 1/2 … Continue reading

Cinnamon Rolls

I had a craving for cinnamon rolls this weekend after talking about them with a friend. I decided I’m make some this Sunday. Well, I couldn’t wait till, so I ended up baking them on Friday night, then warmed them up and iced them on Saturday morning so I could have them for breakfast. I used a recipe from King Arthur Flour, but used their baker’s cinnamon filling instead of just sprinkling cinnamon and sugar on the inside. It’s amazing stuff, and I highly recommend buying some. (No, they don’t pay me to say that. It’s just that good!) … Continue reading

Pizza Dough

Making your own pizza dough is very easy. You don’t have to knead the dough. Just stir the ingredients together and let it rise in the fridge over night. This recipe is based on the one in Rose Levy Beranbaum’s The Bread Bible. I made some changes in the amount, because the original recipe makes a very small pizza. I also had no instant yeast, so I converted the recipe for use with active dry yeast instead. You can see more pizza photos using this recipe in my pizza party post. Ingredients (weights are in parentheses): 1 1/2 cups … Continue reading
